Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Zucchini: Arrange zucchini slices on the baking sheet in a single layer. Brush each slice with olive oil and season with garlic powder, Italian seasoning, salt, and black pepper.
- Pre-Bake the Zucchini: Bake in the preheated oven for about 5 minutes to soften slightly.
- Add Toppings: Remove the zucchini from the oven and top each slice with about ½ teaspoon of marinara sauce, a sprinkle of mozzarella cheese, and your chosen toppings (pepperoni, veggies, etc.).
- Bake Again: Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven, sprinkle with Parmesan cheese and fresh basil or parsley. Serve warm and enjoy!
