- 1 pound boneless, skinless chicken breasts (cubed)
- 4 cloves garlic (minced)
- 1 small onion (chopped)
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk (or half and half)
- ½ cup sun-dried tomatoes (chopped)
- 3 cups baby spinach
- ½ cup grated Parmesan cheese
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 tablespoon cornstarch (mixed with 2 tablespoons water, optional for thickening)
- 1 tablespoon butter
Instructions
- Sauté the Chicken: In a large pot, heat olive oil over medium heat. Add the cubed chicken and cook until golden brown on all sides, about 5-7 minutes. Remove the chicken and set aside.
- Sauté the Aromatics: In the same pot, add butter, then sauté the onion and garlic until fragrant and soft, about 2 minutes.
- Build the Flavor: Stir in the Italian seasoning, red pepper flakes (if using), and sun-dried tomatoes. Cook for another 1-2 minutes to release the flavors.
- Simmer the Soup: Pour in the chicken broth and bring to a gentle simmer. Add the cooked chicken back into the pot and let it simmer for 10 minutes.
- Make it Creamy: Stir in the heavy cream, milk, and Parmesan cheese, then season with salt and black pepper. If a thicker soup is desired, add the cornstarch slurry and let the soup simmer until it reaches your desired consistency.
- Add the Greens: Stir in the baby spinach and cook for another 2-3 minutes until wilted.
- Serve & Enjoy: Taste and adjust seasoning if needed. Serve warm with crusty bread or over pasta for a heartier meal.
Notes
- For a lighter version, substitute heavy cream with Greek yogurt or coconut milk.
- Swap chicken breasts for rotisserie chicken to save time.
- Want a low-carb version? Skip the cornstarch and use cauliflower instead of milk.
- Add mushrooms or zucchini for extra veggies!
