This Creamy Tuscan Chicken Soup is a warm, comforting dish packed with tender chicken, sun-dried tomatoes, spinach, and a rich, garlicky Parmesan-infused broth. It’s a one-pot meal that’s easy to make and perfect for cozy nights. With its bold Italian flavors and creamy texture, this soup is a must-try for any comfort food lover!

  • Total Time: 40 mins
  • Yield: 1 pot (about 6 cups of soup) 1x

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts (cubed)
  • 4 cloves garlic (minced)
  • 1 small onion (chopped)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk (or half and half)
  • ½ cup sun-dried tomatoes (chopped)
  • 3 cups baby spinach
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water, optional for thickening)
  • 1 tablespoon butter

Instructions

  • Sauté the Chicken: In a large pot, heat olive oil over medium heat. Add the cubed chicken and cook until golden brown on all sides, about 5-7 minutes. Remove the chicken and set aside.
  • Sauté the Aromatics: In the same pot, add butter, then sauté the onion and garlic until fragrant and soft, about 2 minutes.
  • Build the Flavor: Stir in the Italian seasoning, red pepper flakes (if using), and sun-dried tomatoes. Cook for another 1-2 minutes to release the flavors.
  • Simmer the Soup: Pour in the chicken broth and bring to a gentle simmer. Add the cooked chicken back into the pot and let it simmer for 10 minutes.
  • Make it Creamy: Stir in the heavy cream, milk, and Parmesan cheese, then season with salt and black pepper. If a thicker soup is desired, add the cornstarch slurry and let the soup simmer until it reaches your desired consistency.
  • Add the Greens: Stir in the baby spinach and cook for another 2-3 minutes until wilted.
  • Serve & Enjoy: Taste and adjust seasoning if needed. Serve warm with crusty bread or over pasta for a heartier meal.

Notes

  • For a lighter version, substitute heavy cream with Greek yogurt or coconut milk.
  • Swap chicken breasts for rotisserie chicken to save time.
  • Want a low-carb version? Skip the cornstarch and use cauliflower instead of milk.
  • Add mushrooms or zucchini for extra veggies!
